Lara’s Energy Balls

Many of you have asked for this recipe which I reference many times in our book. Here you go, enjoy!

Lara's Energy Balls

Combine the following into a large bowl:
2 C. Oatmeal
3/4 C. Chocolate Chips (I either use chocolate or white chocolate)
1 C. Peanut Butter
1 C. Ground Flaxseed
2/3 C. Honey
2 tsp. Vanilla
1/2 C. Raisins
1/2 C. Craisins

Directions: After thoroughly mixed, use a 1″ cookie scoop to form balls on a baking sheet covered with parchment paper. Get your hands slightly wet and roll each scoop to make completely round balls. Put baking sheet in the freezer until all balls are completely frozen. Remove from sheet and store in gallon-sized ziploc bag in freezer. It’s a great grab-and-go breakfast or snack! Enjoy!

*Instead of lining a baking sheet with parchment paper, I use the underside of the plastic lid that came with my 9×13 baking dish. This makes for quick and easy cleanup, and the balls don’t stick to the surface after freezing.

*You don’t have to freeze your balls when storing–you could store them in the fridge–but I find that I enjoy them more when they are cold and it forces me to eat them slower 😉

*This recipe makes a big batch. If you plan to tweak the recipe, cut the recipe in half the first few times, until you find the combination you like best.

*Remember, if you don’t like some of the above ingredients, omit or swap them out with something else! PWF is all about finding what works for you, so don’t be afraid to tweak the above to your liking 🙂

Day 35 – 1% Change {90-Day Challenge} Pursuit Mode

Day 35

Whew!  Life’s been challenging and sometimes you have to move from the PuRsUiT MoDe to survival mode.

That was me last week.

With everything going on – Dad’s situation and an over-extended schedule (that’s my fault but there’s a great lesson there – maybe sometime I can share) – I have had to put my goal of 1% Change On HoLd.  Not for long, but when your head is under water the only thing you care about is getting it above water and gasping for a breath.

That was me last week.  But now I am getting back on schedule and back to pursuing my 1% Change – focusing on the process of perseverance.

Back to pursuit mode.

Guilt-Free Peanut Butter Cups

Robynn and I LOVE peanut butter cups and I can’t wait to share with you some homemade, guilt-free healthy ones! These are a kid favorite too, and I don’t have to feel bad for letting them have this sweet treat–

Now remember, when it comes to Peace with Food, feel free to tweak the ingredients to set you up for success. If the first time around you want to use regular peanut butter (Jiffy or Peter Pan, etc) and use regular pancake syrup, then do it! The first time I made them, I used what I had on hand. Since then, I have changed it to the following:

Ingredients for the Peanut Butter Bottoms:
1 C. Natural Peanut ButterPeanut Butter Cups3 (I buy the Kroger brand at Dillons)
1/4 C. Pure Maple Syrup
1/4 C. Coconut Oil (melted/liquid)

Directions: Combine the peanut butter, syrup and coconut oil in a medium bowl and stir until well combined. Drop a spoonful into mini muffin cups until they are 2/3 full. Put them in the freezer for 10-15 minutes or until hardened.

Ingredients for the Chocolate Tops:
1/4 C. Cocoa PowderPeanut Butter Cups2
1/4 C. Pure Maple Syrup
1/4 C. Coconut Oil (melted/liquid)

Directions: Combine the cocoa, syrup and coconut oil in a medium bowl and stir until well combined. Pour a spoonful on top of the frozen peanut butter bottoms. Put them back into the freezer until hardened.

*I store these in a ziploc bag in the freezer. Serve immediately because they will become soft and lose shape if you leave them at room temperature.
*You could also use regular-sized cupcake wrappers or buy the silicone ones that are re-usable. I prefer the mini-sized cups because the serving size is smaller and I feel like I am getting “more” if I get to eat 2 mini ones, versus 1 large one. Find what works for you! 😉

So, Girl, sit back and relax!  EmBrAcE tHiS pLaCe and this moment.  God’s got you here and this is where He is at.  .  .

There’s no other place I’d rather be!
